So who else here is getting ready to or already involved in canning food this year? Our string beans aren't ready yet but I intend to can every bean, kernel of corn and cucumber I can this year. I've heard food prices are going up more than they already have because of the corn shortable. It seems more and more of the US corn crop is going into making ethanol and less to feed us and our food animals. So the chain reaction will be that vegetables as well as meat from our food animals is going to go through the roof. Get ready people.

I can't wait to start canning. I mean I can wait, but I love the end product. Right now we don't have enough produce from the garden to start canning.

We are actually going to try canning meat this year and I am going to buy the produce to put up because the heat is killing my garden.

I'll be starting our canning here pretty soon too. I am also planning to dehydrate a good bit of stuff. My hubby has an extra job coming up and we are buying a rifle for hunting season and then a whole bunch of food to dehydrate, can, and store.

We have had estimates of $50 a bushel for string beans. It's amazing how people are holding everyone up over food this year. I saw where someone was asking $20 a gallon for blackberries this year.
