Default Chicken & Spinach Casserole

This is a really good casserole recipe I found, and we tried it last week and loved it. Even my picky eater ate it! Serve it with a salad and it's an easy weeknight dinner.

Ingredients:
8 oz uncooked rigatoni
1 T olive oil
1 c chopped onion
1 (10 oz) pack frozen spinach, thawed
3 c cubed, cooked chicken breasts
1 (14 oz) can Italian-style diced tomatoes, drained
1 (8 oz) container Philadelphia chive & onion cream cheese
½ t salt, ½ t pepper
1½ c shredded mozzarella cheese


Directions:
Prepare rigatoni according to pkg directions. Spread oil on bottom of 11x17 in baking dish; add onion in a single layer. Bake at 375 for 15 minutes or just until tender. Transfer onion to large bowl, set aside.


Drain chopped spinach well, pressing between paper towels. Stir in rigatoni, spinach, chicken, & next 4 ingredients into onion in bowl. Spoon mixture into dish & sprinkle evenly with shredded mozzarella cheese. Bake covered at 375 for 30 minutes; uncover & bake 15 more minutes or until bubbly.

Finely chopped spinach is the only way I will eat it either, and I am talking super fine. Sounds pretty good and we might give it a go too and see how it works. I am guessing with my youngest we will have to tell her the green is not spinach though. If she even hears a veggie name she refuses to try it.

My little ones both love spinach, and so do we! I am definitely going to have to give this one a try. If I had the cream cheese this would be dinner one night this week.

This sounds like something you might order at an Italian restaurant! I am definitely going to add this to our menu plan for next week. Sounds great, and looks pretty easy too!
