Default Choosing apples

I read to get the best flavor and texture out of baking apple pies and such, is to use an apple variety with more acidity. Granny Smith, Empire, and Jonathan are excellent choices, because they are firm and tart. I did not know this. I thought I'd post for those like me!

I've never heard of Empire or Jonathan brand apples before. Are they readily available in the grocery store? If I can find them, then I'll be sure to get these varieties next time I bake something with apples. I've always used any old apples I could get.
