Default Do you really need to soak dry beans first?

I hear all the time that you should soak dry beans overnight before you cook them but is this really necessary? I've cooked them lots of times before but have only soaked them once and have to say I didn't like how they came out, all mussy. So do all of you always soak your first?

You are going to have to share how you cook your dry beans. I have tried everything and they still come out way too hard.

I prefer to soak mine overnight, but sometimes I use the quick soak method, which is as follows:

Cover beans with water and bring to a boil. Boil for 2 minutes. Remove from heat, cover, and let stand one hour.

I think soaking overnight is better, but the quick soak method does work just fine.

Well you do need to cook them for at least a couple hours depending on how much you are cooking. I have also cooked them in the crock pot. Just keep checking them off and on to make sure they have enough water. Usually 6-8 hours will do it.

My gram always soaked them overnight, although I'm not sure why. I never made beans before for anything and would love some recipes.
