Default Easy one skillet chicken dinner

I have always been fan of the one pan meals, and fairly easy dinner ideas. This is one a friend passed onto me that we had last week. I thought it turned out pretty well, and we just had a salad on the side.

3 to 3 1/2 pounds chicken pieces
1/3 cup flour
2 tablespoons oil
2 medium onions, halved and sliced
1 tablespoon sweet paprika
1 teaspoon salt
1/8 teaspoon ground black pepper
1 1/2 cups chicken broth
1/2 cup sour cream
parsley sprigs, optional


Directions: Dredge chicken in flour; reserve remaining flour. In a large skillet over high heat, brown the chicken pieces on all sides in oil; remove from skillet. When all pieces are browned, stir onions and reserved flour into the skillet drippings. Cook, stirring for 2 minutes. Stir in paprika, salt, pepper, and chicken broth. Add the chicken back to the skillet. Reduce heat to medium low and cover. Simmer for 25 minutes, turning once, until chicken is tender and juices run clear when pierced with a fork.
Using tongs, remove chicken to a large serving tray or platter. Skim fat from skillet and stir in sour cream. Heat through. Spoon sauce over chicken and garnish with parsley, if desired.
Serves 4 to 6.

Oh this does sound good and one that I will try for sure. I'm like you too, I like the one skillet dinners. I'm going to print this one out so that I can save it and have it on hand for later on. Thanks.

It sounds really good to me too. I love it when you can make dinner and only use 1 pan! I don't have parsley sprigs but I have everything else. You might have just solved my problem of whats for dinner tomorrow.

I don't ever have fresh parsley either so I just keep the dried ones on hand. A lot of times I just skip that though. I made this again and froze it so I have dinner for a lazy day. We will see how it turns out!

Oh Yum! I'm going to try this over the weekend. I bet the kids will even love it. I'm all about cooking easy things and only using 1 pan! Thanks for sharing the recipe.

With two sick kids right now I could definitely use an easy meal or two. I think we will be trying this out over the weekend too. Lucky me, I already have side salads made up too!

I am not sure that would go over well in my house. I do like to try new recipes every once in awhile though so I will put it in the file. I like to make one skillet dinners a lot.

We are huge chicken eaters in this house and a one skillet meal is nice. I need to invest in a few extra large ones myself since we are cooking. It seems we are guessing "Who is coming to dinner" a good bit lately.
