Default Eggplant parmesan

I made eggplant parmesan tonight. It was okay but not the greatest.

Do you think you just need to have a taste for eggplant? I put the salt on it and let it sit to sweat out the bitterness, but some of the end pieces still were a bit bitter.

Do you make this dish?

I think next time I will make it with zucchini. I like it better that way.
