I make something similar that as a matter of fact made for my partners lunch yesterday and for my mum and I as well. I call it Potato Tuna Salad
1. Boil some potato's till soft, but tender, then drain and put in a bowl.
2. Add a good amount of mayonaise, salt and pepper.
3. Chop up a few tomato's, cucumber, gerkins, pickled onions, half a shredded lettuce, 1 can of tuna (large), 1 avocado chopped, 1/2 capsicum diced finely and a small tin of corn.
4. Add a few teaspoons of choppped parsley and mix well. This makes a wholesome lunch or dinner and is very healthy and delicious. |
