What causes green potatoes? I have noticed they have green spots fresh out of the bag. When I peel them, they are green under the skin, too. I read Martha Stewart said to be sure to cut out all the green area from potatoes because it is not suitable for a person to eat. Is there anyone here who knows why not to eat them or what this is?

I thought it was an old wives tale that Green potatoes were poisonous! Holy cow - thanks for the link to the article. I know it says that you would need to eat about 4.5 pounds in 1 sitting for it to do any harm, it's not something I'm willing to try. I won't eat another green potato ever!

Thanks Jason, that is an excellent article! I can see why your posting the link instead of explaining. It is highly informational. I'm sitting here feeling sick, just thinking about eating green potatoes!
