Default Grilled Balsamic Portabella

I marinate portabella mushroom heads in olive oil, minced garlic, sea salt and pepper for an hour. Then, I grill or bake the mushroom heads until they are cooked through. I top with roasted red peppers and fresh mozzarella cheese and broil until the cheese starts to melt. I drizzle with a little balsamic vinegar and either eat it as is, or serve on a toasted sourdough bun. It is so easy and delicious!

Oh my! That sounds so darn good. I'm stopping on my way home from work today to get the mushrooms. I have everything else at home. I can't wait to try these! Do you bake them at 350 degrees?

I have always wanted to try portabella mushrooms but never knew how to cook them. Thanks for the recipe . I'm wondering about how long you bake them? I don't know when they will be done though so I will need an estimate of time.

Chickie, if you cook them on the grill (or skillet), you will do about 3-4 minutes each side. If you bake them, bake them at 350 for about 10 minutes. You can tell they are tender as they will not feel as firm when pressed. They will also darken up as they cook.

You can also add sauteed baby spinach....that is quite tasty, too!!

Wow, that is it? I'm glad I read the cooking time - I would have thought longer too. This sounds like a yummy way to get kids to eat veggies. I'm all for it and am going to give it a go too.

We have a local restaurant that makes a similar dish only the mushroom, red pepper, and mozzarella are broiled on a grilled chicken breast. The dish is $14.95. I think I would rather make it at home for much less! I can't believe I never thought of doing that!

A friend was craving this the other day while we were out at lunch, we get to the restaurant only to find out it had gone out of business. Maybe I need to learn to make this for her, she will be pregnant for a few more months & the craving might come back.
