Default Healthier eating - need ideas

Another year, another I'm going to make my family eat better deal.

I'm going to the grocery store soon and getting some healthier foods. Fresh fruits and veggies, etc.

Can you toss out some ideas of healthy ideas for dinners.

I have a hard time making healthier foods in the winter time but a few good ones are chicken noodle soup and vegetable soup and they are easy to make. Chicken noodle I boil the chicken, take the meat off the bones, put it back in the broth it made, then add cut up celery (include the leaves) and onion, and bite sized potatoes. Let them get tender then add elbow macaroni and boil till tender, add salt. Vegetable soup I take V8 juice add whatever leftover meat I have (usually roast) add frozen mixed veggies and simmer for about an hour. These soups are hardy enough to make a meal but they are good for you!

You really use V8 juice for soup? That sounds very interesting. I've never heard of anyone doing that before. I will have to give it a try.

We just made a turkey breast yesterday and today we plan on having salads with turkey and I am making turkey rice soup tomorrow.

Turkey rice soup sounds wonderful! Is it hard to make? I love having soups and stews in the winter time. The V-8 is great because it has all the different veggies and spices in it.

I've never had V8 juice, does it taste good? I would hate to make soup and have it turn out not good tasting.

Turkey rice soup is easy, you just add some veggies and turkey and then rice instead of noodles. It is my favorite.

I am going to have to try that turkey rice soup especially with all this cold weather we have been having. The V-8 you may not like drinking it but it just tastes like veggie soup when you use it to make soup. It's good for that because of all the different veggies in it give the soup a good flavor.

What about fish? Fish are very healthy and you could use those to cook and eat some good food. Another fun thing that I've been doing is salads. Now I know it doesn't sound fun, but add some beans or tuna and a few odd veggies like artichoke hearts or hearts of palms. Yum.

Try introducing some new veggies we have recently gotten hooked on spaghetti squash. Really easy to make just pierce the skin of the squash with a knife a few times put it in the oven on 375 for an hour. Let it cool for 30 mins and slice in half to remove the seeds. Great by itself or you can use it for the "pasta" in spaghetti.

You can always puree spinach, broccoli, or carrots and sneak it into family favorites like spaghetti sauces or soups and they may not even notice it!
