My daughter has grown a lot of chillies and she gave my wife and I a bag full of them. Half of one was enough to flavour the meal my wife made yesterday so we want to dry the rest so that they will keep for a long time. What's the best way to do this?
The way I do it is just to tie them with cotton and hang them in the window. I have about 6 hanging in a line in the window now. I suppose you could also dry them in a very low oven.
The more sun they get, the better. If I were doing it, it would be done in a green house that retains heat well. Sun just helps bring out the flavor somehow.
It depends upon what type of chilies they are. You can make a string of them and hang them like you do onions to dry. then just snip them off as you go to use them to cook with. Yum.
We have done this, tied them in a long string and they are turning from green to red as well as drying out nicely. It's very easy to snip a piece whenever we need to use it and it looks funky in the kitchen.
