| Brown chicken and andouille sausage in oil. Remove that from the pan and saute onions, celery, a clove or two of garlic, and green peppers. When the veggies are softened, add rice and saute for a few minutes then put the meat back in the pan. Add the right amount of water for the amount of rice you used, cover, and simmer until the rice is cooked. Season to taste with salt, pepper, hot sauce, and fresh chopped parsley.
Sorry I can't be more specific than that. An old Cajun woman taught me how to make jambalaya, but she didn't give me measurements. |
