Default Jambalaya

Jambalaya is one of my favorite foods. I just don't know how to make it. I always order it when I'm at a restaurant that offers it. Do you make your own jambalaya? How do you do it?

Brown chicken and andouille sausage in oil. Remove that from the pan and saute onions, celery, a clove or two of garlic, and green peppers. When the veggies are softened, add rice and saute for a few minutes then put the meat back in the pan. Add the right amount of water for the amount of rice you used, cover, and simmer until the rice is cooked. Season to taste with salt, pepper, hot sauce, and fresh chopped parsley.

Sorry I can't be more specific than that. An old Cajun woman taught me how to make jambalaya, but she didn't give me measurements.

I don't make it either but I do love it. My mom makes a great jambalaya but I can't master it. I'm hoping I will someday. When I do make it - it never turns out just right.

The only way I've ever been able to make jambalaya was when it came out of a box, unfortunately. It's never as good either, of course. I wish I could get somebody with experience to actually show me.
