Default Quick healthy meal

I'm hoping people will write down a quick healthy meal idea here so we have some new meal options for this year. It's busy for us this time of year (sports, zumba classes, etc.) so I need some new ideas.

You can always saute up a bunch of fresh veggies in olive oil then add some cooked chicken. If you don't have fresh then some of the frozen stir fry ones are pretty good. We do this a lot for a quick meal. Especially when we might have some left over chicken in the fridge. I love quick meals like this.

That sounds like a pretty quick and healthy meal Emelia. I bet you could vary it a lot also. Like maybe add some whole wheat pasta to it? Maybe use shrimp or crab meat instead of chicken?
