I am making grilled stuffed mushrooms this weekend for Labor Day, but I just found out we're having company and my recipe is a little too expensive to be making this for a lot of people. It involves mascarpone and gorganzola and specialty sausage. Does anyone here have a basic, inexpensive stuffed mushroom recipe?

Can you replace the more expensive ingredients with something else? Or illiminate them? I don't know what mascarpone or gorganzola is, but sausage can be just spicy turkey sausage instead of "specialty". Or maybe just some artificial crab meat?
