Default Veggies on the Grill

I want to suprise my hubby this weekend with a BBQ dinner for him. The problem is he doesn't eat meat on the saturdays.

I want to make corn on the cob, potatoes, and something else. I'm looking for some ideas on how to cook all this and what else fits good on the grill.

The weather is nice and think he would really enjoy the cooking and eating outdoors.

**Side note, corn is out of season, so i can only purchase the stuff in fresh produce that is almost all the way shucked***

Well the way I have always cooked corn on the grill was when it was not chucked. I would add some spices to it melted with butter and put it on the corn then cook it that way. I do not see why you couldn't do the same even when shucked.

Another possibility would be to soak the corn first for about an hour or two, then cook on low for 30-45 minutes. Some oil or butter on the corn may help.

I've cut up potatoes, mixed in some onions and cheese, put in a tin foil wrap and cooked them that way on the grill that way. Comes out very good.

You could also do the potatoes just as you would in the oven. Poke some holes in it and toss it on the grill.

As far as what else you can do. It really depends on what you like. I've like to roast some bell peppers on the grill. Just cut in half, drizzle a little olive oil on it and through them on.

You can make grilled veggies as a side dish. Take strips of peppers, sweet potatoes, whatever you like and brush liberally with olive oil and pop them on the grill. Salt afterward, let them cool for awhile. Yummy.

I was just going to mention those foil packets. They work well for more than just veggies, too... I've seen people put meat in those packets and also fish, and they always look very tasty.

get some of the big flat mushrooms.. brush them with a little olive oil and lemon juice and grill them... taste delicious!

Those sound very good! What do you serve with them? I think I've seen Rachael Ray doing those on 30-Minute Meals.

Well for us they are normally just an addition to the other bbq stuff Katharina..

but a saladwith a vinegrette dressing would go down well for starters.. THey have a really rich taste.

It sounds delicious and I'll need to give them a try. This thread almost makes
me want to go out and buy a bigger grill.

heheh.. and make it a charcoal grill Katharina.. you know you wanna! Other things that grill well are peppers and aubergines.. (do you call them zuchini? dunno.. the purple ones..)

Stay sounds like you might be talking about eggplant which turns out fabulously on the grill and I love squash and zucchini too. Just brush with a little olive oil and sprinkle with salt and pepper.
