Default Very large zucchinis

It's been raining a lot at our house and when I went out to pick veggies from the garden I noticed 5 very large zucchini's. What can I do with them? They are really too seedy to steam. I've already made bread so I need other ideas.

Just shred it up and put in freezer bags and put it in the freezer. You can always find things to put it in later. Around here, we lock our cars so people don't stuff them full of zucchini. LOL When the vines get started they are very prolific.

How about making stuffed zuchini and then freezing them like that? That would mean you could just warm them up if you were in a crunch for time and need a meal. I've seen a lot of recipes online for zuchini. Try this recipe:

Thanks OilandVinegar.... I had never thought about stuffed zucchini. I bet the kids and hubby will love it too. We have stuffed peppers and mushrooms before but never any kind of squash.

Jordansmom - I already have a ton of it in the freezer! You are right, once it starts it doesn't stop.
