Are there any flowers that do particularly well potted? I want to put a few pots on our front porch, but chances are I am not going to water them regularly and I'm not going to bring them inside at night. So I need something I am not going to kill with minimum maintenance.

The bigger the pot, the less the watering you have to do, but they do need regular watering. Maybe you should consider small shrubs in your pots?

You definitely want bigger pots and ones that have holes in the bottom so the water can run through and not drown out the plants (rain storms). Mums work well in pots - but they are fall flowers.
